Nancy Scharlach – Chief Technical Director; Lead Instructor, FSPCA FSMA Foreign Supplier Verification Programs; Lead instructor, FSPCA FSMA Preventive Controls for Human Food
Nancy Scharlach is the Chief Technical Director for FSMA International. She has been a Registered SQF Consultant in High Risk Processing since 2010 (SQF Registration No: 9717 – FSC #’s: 3, 4, 10, 13, 14, 15, 16, 18, 19, 20, 21, 22, 23, 24, 25, 26, and 35), and is a Lead Trainer for FSPCA FSMA Preventive Controls for Human food (certificate #7323330), FSPCA Foreign Supplier Verification Programs (certificate #7e62ff08), and a Lead Trainer through the International HACCP Alliance.
Nancy earned a B.S. in Microbiology from the University of Montana in 1996, and has worked in the food industry her entire career. With over 20 years of experience, Nancy has worked for nationally recognized companies such as The Schwan Food Company, The Hain Celestial Group, and Jamba Juice Company. In 2008, Nancy founded Peterson Food Safety, LLC, a highly successful food safety consulting firm located in the Denver area. In 2014, Peterson Food Safety, LLC was expanded and rebranded to Soterian Systems, LLC, of which Nancy is still the President and Chief Technical Director.
Nancy has extensive experience working with domestic and international processors and growers in countries such as India, Vietnam, Mexico, China, Chile, Argentina, Brazil, Peru, Ecuador, Guatemala, and Canada. Her experience expands to working globally in over 2000 manufacturing facilities and hundreds of produce growers.
Nancy’s diverse knowledge and expertise in the food industry includes high risk processing in USDA and FDA RTE fresh and frozen meal and products, High Pressure Processing (HPP), fresh cut produce, Good Agricultural Practices (GAPs), and fresh produce harvesting, fresh and frozen dairy manufacturing, retail QSR, IQF fruit and vegetables, bakery and snack products, sprouted seed products, food contact packaging, thermally processed and commercially sterile products, single strength juices, thermally processed sauces, salsas and canned goods, pasta items, and distribution and warehouse storage practices, pet food products, and nutraceuticals.
Nancy has authored extensive HACCP & Food Safety Plans and Quality and Food Safety Management Systems for numerous companies in addition to working with processors at the facility level to integrate the best practices in the industry and to comply with regulatory and customer requirements. Nancy also works with clients to conduct microbiological challenge studies on product and equipment to achieve validation programs for food safety. Most recently, Nancy has worked onsite with global food companies on creating, implementing, and training all levels of employees and management on the new FSMA Food Safety Plans and cGMPs.
In addition to being a Registered Safe Quality Food (SQF) Consultant, Nancy is the former President and currently an active board member of Ceres Certifications, International (CCI) Certifying Body. She is HACCP certified, an FSPCA FSMA PCQI and FSVP Lead Instructor, International HACCP Alliance Lead Instructor and participates in continuing education courses and seminars to ensure the best developed food safety and quality plans are developed for the industry.
Lynn Jones – Food Safety and Quality Professional
Lynn Jones is a qualified Food Safety and Quality Assurance Professional. With 11 years of experience in research as a Microbiologist, she worked on developing a platform to identify novel therapeutics against C. difficile, characterizing B-Lactamases, and identifying CTX-M type ESBLs in Multidrug-Resistant Bovine commensal E. coli isolates, and identifying membrane associated mechanisms for the antifungal activity of Occidiofungin against Candida albicans. She also has four years of collegiate teaching experience in Food Chemistry Lab, Food Principles and Applications, Human Nutrition, Food Service Systems Management and Food Science.
Lynn graduated from The University of California, Davis with a B.S. in Nutritional Biochemistry and receiving both a Departmental Honors Award and an Outstanding Senior Recognition Award. She completed her post-baccalaureate studies in Food Science Technology and pursued doctoral studies in in Food Science Technology and Biology at Texas A&M. Lynn has worked in Food Safety and Quality Assurance for Coca-Cola Beverages, Del Monte Fresh Produce, Mile Hi Bakery and Blue Moose of Boulder.
Lynn is a very valuable member of Soterian and FSMA International. She works in the Castle Rock office with Nancy and the Team and travels nationally to assist clients in all aspects of food safety and quality projects. Lynn is a PCQI, HACCP Certified, SQF Practitioner, and continuously attends training to keep her knowledge in the food industry fresh.
Jason Remy – Technical Director
Jason Remy is an experienced Quality and Food Safety Professional with 10 years experience. Throughout his career, Jason has conducted supplier audits, policy writing, 3rd party audit management and employee training at his positions. As an experienced SQF Practitioner, Jason consistently attained excellent results. Jason has diverse experience working with the FDA and USDA in plants ranging in size from small to one of the largest. Throughout his career, Jason has shown the ability to thrive in a cross-functional team environment including real world knowledge with hands-on plant manufacturing food safety practices.
Jason has his B.S. from The Ohio State University were he conducted post-graduate research in Food Microbiology. He has worked in Quality Assurance for The HoneyBaked Ham Company, Medifast, and Campbell’s Soup. Jason has SQF Practitioner, HACCP, PCQI, Qualified Individual for LACF, Part 113 and Better Process Control School certifications. Jason is a valuable member of the FSVP Partners’ technical team.
Greg Scharlach – Sales and Operations
Greg Scharlach works with Sales and customer fulfillment. With a diverse career spanning over 25 years, Greg brings business and marketing experience to FSMA International. He graduated from the University of Southern California in 1993 with a degree in Sports Information and began a Public Relations career with the Los Angeles Dodgers, Clippers, and the Rancho Cucamonga Quakes, before choosing to become a Financial Adviser in 1995.
Originally licensed as a full-service Financial Advisor with Prudential Securities in 1995, Greg eventually became an Associate Vice President at Morgan Stanley, and started his own Financial Advisor practice in Denver in 2009 called Greg Scharlach LLC, Strategic Wealth Planning.
Greg sold his Financial Advisory firm in 2014 and started working full-time with Soterian Systems, LLC, a food safety training and consulting firm founded by Nancy Scharlach. Aside from daily operations, sales and marketing, and business development, Greg’s other responsibilities include all accounting functions, accounts receivable, accounts payable, contract review, vendor management, office management, training course logistics, website management, IT and more.
Greg is HACCP certified by the International HACCP Alliance, and is also a FSMA Preventive Controls Qualified Individual and has successfully completed the FSPCA Foreign Supplier Verification Programs course.
